We love this recipe for banana bread. It’s moist, filling, and full of nutrients!
But the best part is that it’s diabetic-friendly, so people with blood sugar issues can enjoy it with you!
And, if loaves aren’t your thing, you can easily pop them into muffin tins and make muffins instead.
If that’s the case, bake at 400 degrees for approximately 20 minutes. However, if you’re making regular banana bread, bake at 375 degrees for about 50 minutes or until a knife inserted in the center of the loaf comes out clean.
Here’s what you need!
1c quinoa flour
1/2 c wheat germ
1/2 c ground flaxseed (or chia, hemp, etc)
2 tsp baking powder
1/2 tsp baking soda
1 tsp cinnamon
Mix together :
1 egg
1/3 cup melted coconut oil
1/2 c juice of an orange (I grate the rind and throw some in as well)
1/4 c coconut milk
Mix dry and wet ingredients together. Mash 4 overripe bananas and mix in. Pour into a loaf pan. Add chocolate chips (if you’re not making it for a diabetic!) walnuts or raisins if desired. About 1/2 a cup should do it.
